Sushi Taxi was recently featured in La Presse, which took an interest in the Quebec-based banner’s growth, its culture of innovation, and its unique way of staying on top of new trends.
In the article "Sushi Taxi à l’affût des nouvelles tendances" [Sushi Taxi on the lookout for new trends], published on July 20, 2026, journalist Megan Foy highlights the launch of Sushi Pop, our growth in Quebec, and the important role our franchisees play in the brand's evolution.
Ideas that also come from our franchisees
At Sushi Taxi, innovation doesn't just come from headquarters. Our franchisees are in the field every day, listening to customers, new consumption habits, and emerging trends.
This proximity directly fuels the development of new products.
It was, in fact, an idea from the network that contributed to the creation of the Plateau Apéro, which has now become one of our popular products.
This culture of exchange allows Sushi Taxi to continue evolving its menu and experience in line with the reality of consumers.
Sushi Pop: a new way to eat sushi
La Presse also took an interest in one of our most recent innovations: Sushi Pop.
Inspired by a concept observed elsewhere in the world, this sushi on a stick was designed to meet a new way of consuming: more spontaneous, mobile, and adapted for festivals and events.
Just a few weeks after its launch, Sushi Pop is already generating a lot of buzz, both in the field and on social media.
30 branches and continued growth
The article also looks back at the significant growth experienced by Sushi Taxi over the last few years.
With the opening of more than 10 new branches in one year, Sushi Taxi now has 30 restaurants in Quebec. The 30th location in the network opened its doors in Saint-Eustache in July 2026.
Over the past year, Sushi Taxi has also recorded sales growth of more than 10%, with the banner's revenue now exceeding 25 million dollars.
And the growth doesn't stop in Quebec: Sushi Taxi is also preparing its first openings in Ontario.
A new milestone for a Quebec brand that, since its beginnings in 2000, continues to evolve its way of creating and serving sushi.
